Experiment with Baking No Mixer Easy Cupcakes on National Chocolate Cupcake Day

Moist Chocolate Cupcakes- Super Easy- BudgetYes, it does seem that every day is a special day. Cupcakes are special, but it seems that chocolate cupcakes make it to have their own special day each October 18.

According to nationaldaycalendar.com, we really do not know the origin of the day but we do know the origin of cupcakes:

“Cupcakes can be traced back to 1796 when there was a recipe notation of “a cake to be baked in small cups” written in American Cookery (by Amelia Simmons). The earliest known documentation of the term “cupcake” was in 1828 in “Seventy-five Receipts for Pastry, Cakes, and Sweetmeats” in Eliza Leslie’s Receipts cookbook. Cupcakes were originally baked in heavy pottery cups.”

Today, cupcakes are the rage. They are served at formal weddings and for afternoon after school snacks. Bitesized and portion controlled are even great for grandmas.

Making chocolate cupcakes from scratch does not even require a mixer and do not contain milk or eggs. Check this one out from food.com that takes 10 minutes preparation.

Of course, the best is using paper cups in the muffin tins for easy cleanup. Remember to cover the kitchen counters and floors with old towels and use plastic measuring cups and spoons. Share the tasks. Let the readers read and measure. Give the younger grandchildren the dry ingredients to pour and the older grandchildren the wet ingredients to pour. Mixing by hand is a great counting exercise!

1 1/2 cups flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
1/2 cup cocoa powder
1 cup water
1/2 cup vegetable oil
1 teaspoon vinegar

Mix all of the dry ingredients well with a mixer or wooden spoon first then add in all your liquid ingredients. It should be brown and smooth, free of lumps.
Bake at 350 F for 15-17 minutes if you are baking cupcakes for a cake I’d say 17-25 minutes.

That is enough baking for this Grandma. Ready made frosting is the best, and vanilla frosting with rainbow sprinkles is a click away on Amazon.

We can have dessert first always at grandma’s house. Now, can we have chocolate cupcake day every day!
